Wild Game Night Pizza
Turn the tables on take-out pizza by serving homemade instead. Top with your own wild game meat and any number of cheeses and creative toppings. Any way you slice it — it's still pizza. — Kris Wetherbee
Hawaiian Delight Pizza with Caramelized Onions
Use whatever game sausage you have on hand, however an Italian-style sausage takes this pizza over the top with flavor.
Ingredients
- 1 (12-inch) prepared pizza dough or crust
- 8 ounces game sausage, cooked, chopped or sliced*
- 1 cup sliced sweet onions
- 1 tablespoon extra-virgin olive oil
- 3/4 cup prepared pizza sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded white cheddar cheese
- 1/2 cup sliced mushrooms
- 1 (8-ounce) can crushed pineapple, drained (about 1/2 cup)
- 1/3 cup chopped roasted red peppers
* Pre-cooked sausage should be sliced ¼-inch thick.
Directions
- Preheat oven to 475 F. Transfer pizza crust to a baking sheet or pizza screen. Prepare game sausage and set aside. Using a nonstick skillet, sauté onions in oil over medium-high heat for 5 to 10 minutes or until lightly golden (caramelized). Remove from heat.
- Spread sauce evenly over pizza, leaving a half-inch border around the rim. Sprinkle evenly with both cheeses.
- Arrange caramelized onions and sliced mushrooms over the cheese, then top with pineapple and roasted red peppers.
- Bake for 12 to 15 minutes or until the crust is lightly golden and the cheese is bubbly. Makes one 12-inch deep-dish pizza or one 15-inch thin crust pizza.
